Let us tell you more about why you get your money's worth with Retsel grain

been printed for the purpose of helping you understand why we are so exited
about home flour milling and our products.

AGE-OLD PRINCIPLES
When our people were
searching for the best, in a personal flour milling machine, we were impressed
to look into the past for some solid facts. We found that for centuries the
proven technique of a slow-turning milling stone was used, along with the principle
of grinding the grain with the use of pressure between the stones, crushing
and pulverizing the grain as it was fed between and through the milling stones.
A different type of flour was obtained from this milling process than in today's
milling, in that the skin or bran part of the grain, along with the rest
of the kernel, came out of the mill in a fake-type flour, being flat like a
leaf. (In high-speed mills, these small particles are in the form of chunks.)
The flake type flour is very "soft" to the feel, and when moisture is applied,
it absorbs very rapidly and completely.
Lower temperatures in the milling chamber due to less speed and friction were
apparent (which we feel is good) and ease and simplicity of perfect stone face
alignment was ideal. Perfect stone face alignment is an absolute must
on all mills to get fine flour.
After long and deliberate tests and debates,
we decided to reach into the past and bring forward into our time the best milling
principles ever devised. You will find these principles apparent in any stone

Q. WHY ARE RETSEL-DESIGNED MILLS THE ONLY SLOW TURNING MILLS BUILT?
A. Cost of manufacturing is
probably the simplest answer. There have been no other companies willing to
build a similar mill, meet our prices and specifications, and make the kind
of money that they are used to making. Competent personnel, automation, and
firm business practices make it possible for Retsel to build and sell you a
quality mill at savings of $20 to $250 from comparable competitive products.
Q. HOW DOES THE WARRANTY ON RETSEL MANUFACTURED MILLS COMPARE WITH MILLS
BUILT BY OTHER MANUFACTURERS?
A. Flour mills manufactured by Retsel Corporation have a unique warranty, inasmuch
as we warranty parts and workmanship on our mill for ten (10) full years, plus
Retsel mills repaired at the factory which extends for the life of the original
purchaser. This part of the warranty covers only the labour, an does not include
replacement parts or freight costs. The warranty does not cover mills that have
been dropped or abused, or used for milling things other than grains, seeds,
or similar materials. Also, a warranty card must be sent to the company within
30 days of purchase to validate warranty.

Q. WHY SHOULD I GO TO THE EXPENSE OF OWNING MY OWN MILL?
A. The cost of home flour mills seems high, and to someone who has never had
one, they may wonder if they would ever use one enough to justify the investment.
The truth of the matter is, if you plan to purchase one and leave it in the
shipping box until some future time that "YOU MIGHT NEED IT," it will probably
not be the best investment you have ever made. But on the other side of the
coin, if you purchase it, and use it, and give it a chance to serve you and
to prove to you its worth, it will be one of the best investments you will ever
make.
In selecting a mill
don't cheat yourself by buying the cheapest one on the market, just because
it is cheap, nor the most expensive to guarantee quality. Select one that is
suited for you, will it do what you need done now and in an emergency, and is
priced somewhere within reason as to what you are paying in connection
with what you are getting. Any good mill will increase the value of your health,
save you more money than it costs in a short time, to say nothing about added
flavour, food value, and more security.

Q. BECAUSE MANY CUSTOMERS PREFER A NICE-LOOKING
APPLIANCE ON THEIR COUNTER, WHY DOESN'T RETSEL USE FANCY CABINETRY?
A. We agree that
our mills may not win the mill beauty pageant, however, we do not feel we heed
to apologize for their looks. There are many sound reasons that stop us from
"dressing up our mills." Just some examples:
- A cost increase
of from $25 to $150 would be experienced, depending upon just what was done.
- There are no mills
easier to clean and take care of than ours. Covering them would only make
keeping them clean much more difficult and less effective.
- Hand operation
would be impaired.
- Cost of packaging
and shipping a mill with a fragile cover would add even more to the end cost
to you. If cupboard-top-class is truly a major factor for you in the selection
of your flour mill, a sincere look at customizing may be in order. As Retsel

Q. IS THERE ANY ADVANTAGE
IN "STONE" GROUND FLOUR OVER FLOUR MILLED WITH METAL BURRS OR IN SOME
OTHER MANNER
A. For all general purposes, flour is flour, regardless of how it got that way.
For centuries millers have ground flour in their larger slow-turning stone mills.
This flour was superior to all other milling techniques and won respect as being
the only way of doing the job right. Today the fact remains that most people
feel that if they have a stone mill they have a stone mill they have best, which
is not necessarily the full truth. It is true that most stone mills will do
a finer job grinding flour than most metal burr mills, and most stone
mills will outwear metal burrs. Most of these mills, whether metal or stone,
turn at high speeds, causing excessive friction and heat, and in most cases,
the quality of flour is less than the best in either type.
One of the great advantages
of a Retsel-designed mill is the mills utilize a stone or burr of modern design,
yet adhere to the slow-turning milling techniques that have been proven superior
for centuries.

Q. DOES RETSEL USE ANY WOOD OR POROUS MATERIAL IN BUILDING ITS MILLS?
A. Retsel Corporation, along with all "major" appliance manufacturers, avoids
the use of wood and porous material in manufacturing a quality appliance. Besides
the difficulty of cleaning the wood cabinetry, there is also the problem of
loosening bolts in wood and porous material in manufacturing a quality appliance.
Besides the difficulty of cleaning the wood deterioration, especially around
bolt holes, over a period of time. We do not believe GENERAL ELECTRIC, WESTINGHOUSE,
or others would consider making their appliances out of wood.
STONES - THE HEART OF YOUR MILL
If you read closely the claims by
the majority of flour mill manufacturers, you will find that everyone claims
they have the best and hardest stones on the market. When the real truth
is examined, you may be surprised to find....they are all true! The actual stone
make-up of the majority of the mill manufacturers is exactly the same. Only
the stone sizes and designs are different.
Until recently this was true with
the Retsel brand mills, too. But now things have changed. Retsel design engineers,
with the aid of a major stone manufacturing company, have developed a new formulation
that allows for a much harder bonding of the stone. In this manner, we
have created an almost indestructible stone.
The queer thing about this particular
material is that it cannot be used satisfactorily on high speed mills.

DON'T GET BURNED!
Q. DOES HIGH HEAT BUILD-UP IN HIGH-SPEED
MILLS REALLY DAMAGE THE DELICATE NATURAL VITAMINS IN THE FINISHED FLOUR?
A.
This is a question that has been the source of controversy in the home flour
mill business for a number of years. Even though there have been studies
of the subject and the point has been proven -- both ways a number of
times -- we contend that excessive heating of the dry kernel of grain will cause
damage. Some companies feel that if you have to heat the flour to bake it, that
heat during milling should not hurt anything. What they fail to tell you, however,
is the simple fat of moisture. Moisture is essential to baking, and shields
the germ oil and vitamins from intensive heat directly upon them. As an example,
try this experiment; put one kernel of wheat in a cup of water and let it soak
overnight or until it is well soaked with moisture. Take it out of a cup, insert
a straight pin in the kernel and strike a match under it and let it burn
until the outside is burnt black. Now take a dry kernel and put a match under
it. Notice how the dry kernel burns like a stick of wood? Now put both kernels
of wheat on a sheet of paper and cut them open. You will find the kernel
that was dry has completely burned up, but the one with moisture has only the
shell blackened, even though the same amount of heat was applied to both
kernels. We wish you would try this experiment to see for yourself. In milling
whole wheat flour in any home stone mill, the wheat must be as dry as possible,
so we feel our age-old SLOW-TURNING LOW-HEAT MILLING PROCESS IS SUPERIOR
TO ANY HIGH-SPEED PRINCIPLE ON THE MARKET.

A BUYER'S GUIDE TO ELECTRIC GRAIN MILLS
A GRAIN MILL is a good household investment.
It allows a family to buy grains in bulk, thus saving money. And by grinding
grain only when you need it, your flour is always fresh and nutritious.
Moreover, a mill allows you to try all sorts or unusual flavour and texture.
But a grain mill can be a difficult item to shop for. Most are sold through
mail-order catalogs, so there's seldom a chance to see one firsthand,
see how it's made, and to watch it in action. Few people have them, so you'll
probably be hard pressed to find a neighbour with one to show you.
TEMPERATURE
Chemical reactions happen more easily at higher
temperatures.
STONES VS. STEEL PLATES
In an electric mill, stones are preferred over
steel burr plates because they grind finer, produce less heat at finer
settings, and wear better. But stone or steel these mills grind whole grains
into whole grain flours. Unlike commercial milling, nothing is sifted
off in de-germing process.
Home-germing
process. Home-ground flour is quite a big step up from the commercial
bran less, germ less, starchy powder. Nutritional uptake depends more
on the grind and what you're looking for from the flour. A finer grind
exposes more surface area, so more vitamins and minerals can be assimilated
during digestion. But when bran is ground too fine, it loses some of its
effectiveness as a fibre. It is recommended that bran, the best overall
water binder in digestion per unit of material eaten, be consumed in crude form.
It has two to three times the water-holding power of fine bran. The Retsel Mil-Master
has an appealing calm about it. It is geared down to grind slowly, delivering
flour at a steady, cool 115 degrees F. The hopper is
large enough to keep it busy without constant attention, though you may just
want to watch the flour as it gently falls from the stones into your bowl. There's
no dust flying, so no need for a cabinet. It may not win a beauty contest,
but it requires no more cleaning than a light dusting. The stones can easily
be removed for cleaning. The Mil-Rite grinds more slowly than high-speed
cabinet mills, but because there were no stops for dumping the receptacle
or adjusting the stone setting during the ten-pound grind, the real grinding
time, 31 minutes, compared with higher-speed mills. These Retsel mills take
the hand grinding adaptation seriously. A gear can be removed from the Mil-Rite
so you're not turning the motor too -- an exclusive feature. And
the crank is extra long for added leverage. Most high-speed mills have
a direct drive handle with a 1:1 ratio, which is extremely slow. Since the Retsel
mill is made to be productive at slow, cranking by hand is much faster.
